GRANDMA’S SHOOFLY PIE
1 (9-inch) pie shell
1 c. molasses
¾ c. hot water
¾ tsp. baking soda
1 egg, beaten
1½ c. all-purpose flour
1 c. packed brown sugar
¼ c. shortening
Preheat oven to 400°F.
To Make Bottom Layer: In a medium bowl combine molasses, hot water, and baking soda. Stir well. Whisk in beaten egg. Pour mixture into pie shell.
To Make Crumb Topping: In a medium bowl, combine flour and brown sugar and mix well. Cut in shortening until mixture resembles coarse crumbs. Sprinkle on top of molasses layer.
Bake in preheated oven for 15 minutes. Lower temperature to 350°F. and bake an additional 30 minutes.

½ tsp. nutmeg
⅛ tsp. salt
¼ lb. cold unsalted butter
¾ c. molasses
¾ c. boiling water
½ tsp. baking soda
