MAPLE & BALSAMIC VINEGAR DRESSING
1 tsp. dry mustard
1 tsp. cilantro
3 Tbs. balsamic vinegar
2 Tbs. maple syrup
1 Tbs. lime juice
1 clove garlic, minced
1 c. extra-virgin olive oil
½ tsp. salt
¼ tsp. black pepper
Mix together the first six ingredients.
Whisk in oil until dressing is emulsified. Salt and pepper to taste. Refrigerate for several weeks.
MAPLE NUT CAKE
2 c. flour
¾ c. white sugar
3 tsp. baking powder
1 tsp. salt
½ c. oil
¾ c. cool water
¾ c. brown sugar
2 Tbs. maple syrup
7 eggs, whites and yolks separated
1 c. chopped pecans
½ tsp. cream of tartar
Combine flour, white sugar, baking powder and salt. Blend in oil and water until smooth. Stir in brown sugar and syrup. Add egg yolks and beat well. Stir in nuts. Set aside.
