Lime Marinade

1/4 c. fresh lime juice

2 Tbs. brown sugar

2 Tbs. olive oil

1 Tbs. Worcestershire sauce

3 large cloves garlic, crushed

Combine all ingredients and mix well. Makes about ½ cup, enough for 1-2 pounds of beef.

Prospect Farm Sloppy Joes

1 lb. grass-fed ground beef
¼ c. chopped onion
¼ c. chopped green bell pepper
½ tsp. garlic powder
1 tsp. yellow prepared mustard
¾ c. ketchup
3 tsp. brown sugar
Salt and pepper to taste

Brown beef, onion, and green pepper over medium heat. Stir in the ketchup, garlic powder, mustard, and brown sugar and mix thoroughly. Reduce heat to low and simmer 30 minutes. Add a little water and extra ketchup as it cooks so it won’t burn. Season with salt and pepper and serve on good wheat sandwich rolls.

One 2-3 pound boneless grass-fed beef chuck roast
2 Tbs. olive oil
1 small can tomato sauce
½ c. beef broth
½ c. red wine (not cooking wine)...
