MINI-TACOS

Mix together and heat:
4-5 c. shredded rotisserie chicken
1 packet taco seasoning
1 jar 15.5-oz. Tostitos medium salsa
½ jar 15.5-oz. Tostitos mild salsa
Mix together and heat:
1 can refried beans
2-3 Tbs. sour cream
Toppings
Diced tomatoes
Diced Vidalia onion or green onion
Shredded lettuce
Shredded Mexican cheese
3 packs soft Mission Street Tacos shells, 12 per pack; no need to heat
30 colored mini clothespins purchased at Michael’s Arts and Crafts
Lay taco shell flat and spread small portion of bean mixture on it. Next spread small amount of chicken mixture, then top with tomatoes, onion, lettuce and cheese. Bring sides together and clip with clothespins.
It may take a couple of times to get the right proportions so you can close the shell.
