MY DADDY’S CORNBREAD
1 c. plain cornmeal
3 Tbs. all-purpose flour
2 Tbs. white sugar
1 tsp. baking powder
1 tsp. salt
1 egg
1 small can evaporated milk (5-oz.)
2/3-¾ c. hot tap water
2 Tbs. Crisco shortening
Preheat oven to 400 degrees. Place an 8-inch cast iron skillet with 2 Tbs. Crisco in oven to get hot. Mix all dry ingredients together. Add egg, milk and hot tap water until you get a pancake consistency. Add to hot skillet and cook for 17 to 20 minutes depending on your oven.
 
MARTHA’S PIMENTO CHEESE SPREAD
1 3-oz. pkg. cream cheese, softened
1 c. grated Cheddar cheese
1 c. grated Monterey Jack cheese
½ c. mayonnaise
¼ tsp. salt
1/3 tsp pepper
¼ tsp. garlic powder
Dash of Mrs. Dash (original)
1 small jar pimento
1 tsp. grated onion
Mix all ingredients together with an electric mixer until very smooth. Refrigerate until ready to serve.
