GRANNY’S GUINEA CLAM CHOWDER
“My granny was a Haywood and my pa was a Jenkins. I remember my pa sitting on the door steps shucking clams so my granny could make a wonderful treat. Hope you enjoy the chowder as much as our family.”
5-8 slices of streak o’ lean (salt pork)
1 large onion, chopped (about 2-c.)
6 c. potatoes (about 2 lbs.), cut into ½-inch dice
Shucked clams, chopped, reserve juice (about 1½ pint clams and juice)
Water to cover potatoes about 2 inches
Salt
Freshly ground black pepper
In large soup pot, add the salt pork and onions. Cook, stirring occasionally until the onions soften and the salt pork begins to brown, about 8-10 minutes. Add the potatoes, clams, clam juice and water to cover about 2 inches. Bring to a boil and simmer until potatoes are soft, about 30 minutes. Season with salt and pepper. Feeds about 6 people.
Also tastes great with dumplings.
