AUNT RUTH’S SALAD
4 oz. cream cheese
1 pkg. lime Jell-O
1 small (6-oz.) can crushed pineapple, drained reserving juice
Dissolve Jell-O in 1-c. hot water.
Mix cream cheese in hot gelatin mixture.
Add pineapple juice.
Add pineapple.
Pecans
WINE JELLY
2 envelopes gelatin
1 c. cold water
1 c. boiling water
1 c. sugar
1 lemon
1 c. wine
Soak gelatin in cold water. Dissolve sugar and soaked gelatin in boiling water. Add wine and lemon juice. Strain into dish.
CANDIED SWEET POTATOES
Cut boiled sweet potatoes in thin slices. Put in dish layers of potatoes each layer being covered with sugar and bits of butter. Add 1 c. milk and bake.
SWEET POTATO MERINGUE
4 potatoes, medium size, run through ricer
Piece of butter size of an egg
1 pt. milk
½ tsp. vanilla
Little nutmeg
3 eggs (yolks)
Pinch of salt
After potatoes are brown, cover with meringue made of whites of 2 eggs.
3 Tbs. pulverized sugar
Brown slowly.
