Ahi Tuna Shooter
(Serves 10)
1 lb. ahi tuna steak
Sesame Seaweed Salad (packaged)
1 avocado (peeled, pitted and diced)
2 tsp. wasabi powder
1 Tbs. sesame oil
1 Tbs. black sesame seeds
1 Tbs. white sesame seeds
1 cup soy sauce
1 cup heavy whipping cream
1 tsp. clover honey
½ tsp. kosher salt
½ tsp. ground black pepper
½ tsp. ginger
1 oz. wasabi micro greens
Whip together avocado, wasabi powder, heavy cream, and honey until completely blended and tripled in volume. Next, combine small diced Ahi Tuna, ginger, salt, pepper, sesame oil, soy sauce, and white and black sesame seeds. In a shot glass, or something similar, put down a pinch of seaweed salad. Then put down about a ½ inch thick layer of avocado wasabi mousse. Next, put about ½ oz. of marinated tuna on top of the mousse. Then, lastly, put a pinch of wasabi micro greens on top of the tuna. Repeat for all shooters. Serve and enjoy.
