APPLE, NUT AND RAISIN BREAD PUDDING
An original recipe
6 eggs at room temperature
1½ c. sugar
1 can of milk (Pet or Carnation)
1½ pkg. hot dog rolls broken into small pieces
2 medium apples, chopped fine
1 c. nuts
1½ c. raisins
½ stick butter
2 Tbs. lemon extract
2 c. whole milk
Beat eggs until fluffy; add sugar and mix well. Add milk and broken roll pieces and mix well. Put in apples, nuts, raisins and butter; mix well. Then add milk and mix well. Add lemon extract and put into a greased large casserole dish or a dish that measures about 4½ inches deep. Sprinkle with nutmeg. Bake at 300°F. until firm.
 
SEVEN-LAYER LEMON CAKE
1 lb. salted Land O’ Lakes butter
2 c. sugar
9 eggs
2 c. cake flour
2 tsp. lemon extract
Lemon Filling
1½ c. sugar
½ stick margarine or butter
4 heaping Tbs. cornstarch
1 c. milk
1 c. lemon juice (about 6 lemons)
Icing
1½ lb. 10X sugar or 2 lb. pkg.
5 Tbs. milk
1/3 c. Crisco
3 Tbs. lemon extra...
