KEY LIME PIE NUMBER ONE
5 egg yolks
1 (14-oz.) can sweetened condensed milk
½ c. Key lime juice
1 (9-inch) pie crust of choice
Preheat oven to 375 degrees. (Of course the first pie would not have been cooked at all.) Combine egg yolks, sweetened condensed milk and lime juice. Mix well. Pour into unbaked shell. Bake for 15 minutes. Allow to cool. Garnish with lime slices.
HEIRLOOM KEY LIME PIE
In a bowl combine 1¼ c. graham cracker crumbs, 1/3 c. sifted confectioners’ sugar and 6 Tbs. unsalted butter, melted and cooled. Press the mixture into a pie plate to form crust; bake at 350 degrees F. for 10 minutes until lightly browned; then cool on rack. Beat 4 egg yolks until light in color; stir in one 14-oz. can sweetened condensed milk, ¼ c. lime juice, ½ tsp. cream of tartar and then another ¼ c. lime juice.
