CANNED SPAGHETTI SAUCE
“This recipe comes from ‘Taste of Home’ online. We make this all year along with my canned tomatoes.”
25 lbs. tomatoes
4 large green peppers, seeded
4 large onions, cut into wedges
4 cans (6 oz. each) tomato paste
1 c. vegetable oil
2/3 c. sugar
¼ c. salt (plain)
8 garlic cloves, minced
4 tsp. dried oregano
2 tsp. each: dried parsley flakes, dried basil, crushed red pepper flakes, Worcestershire sauce
2 bay leaves
1 c. plus 2 Tbs. bottled lemon juice
Bring 8 c. of water to a boil in a Dutch oven. Place tomatoes, one at a time, in boiling water for 30 to 60 seconds. Remove immediately and plunge into ice water. Peel and quarter tomatoes.
In a food processor, process green peppers and onions in batches until finely chopped. Combine the tomatoes, green pepper mixture, tomato paste, oil, sugar, salt, oregano, parsley, basil, pepper flakes, Worcestershire sauce and bay leaves in a stockpot. Bring to a boil. Reduce heat and simmer u...
