FRITTERS

Clam Fritters

2 c. cornmeal

½ tsp. baking powder

Pepper to taste

2 Tbs. oil or shortening

¼ c. flour

½ tsp. salt

Clams

Mix all ingredients except oil or shortening together in a bowl and drop by large spoonful into hot oil in a cast iron frying pan. Turn once.

Oyster Fritters

Use same measurements and ingredients as for clam fritters but add oysters instead and fry in the same manner.

Summer Squash Fritters

2 c. grated zucchini or yellow squash or combination of both

Layer in bowl and salt; let stand at least 1 hour or overnight. Mix together until well blended (mixture will be thick).

2 c. Bisquick

½ c. cold water

1 tsp. onion salt

1 egg

¼ c. grated Parmesan cheese

1 tsp. oregano

Take squash, handful at a time, and squeeze dry as possible. Add to batter. Mixture will thin out. Drop by spoonful in hot oil and deep fry ’til golden brown. Drain on paper towels. May be reheated for lunch or...
