Eat up! This is National Pancake Week

February, our shortest month, 29 days this year, has been distinguished by many special titles. Of course 2016’s February brings us Leap Year. We also find on the calendar Shrove Tuesday, or Pancake Day (Feb. 9), Valentine’s Day, Washington’s Birthday, National Cherry Month and National Pancake Week (19-25) to name a few.
Pancakes, originally known as Alita Dolcia (“another sweet”), are the epitome of comfort food. Sometimes they are referred to as hoecakes, flapjacks, griddle cakes or crepes but by any name they are a food enjoyed by all ages and not always at breakfast. How about pancake suppers? The versatility of ingredients makes them perhaps the most popular food of all time across generations and continents. This comfort dish will see you leave the table smiling and fully satisfied.
