Asian Crab Balls
The Chesapeake Bay blue crab was star of the show recently at the annual Crab Derby in Crisfield, Maryland.
There was a contest for the fastest crab-picking award, and another that took place in the kitchen: the crab cook-off. From far and near cooks came to show what they could do with one pound of crabmeat, and they demonstrated great creativity.
Nineteen men and women entered their crabmeat dish into one of the prize categories: appetizer, soup or salad, entrée or crab cake. It isn’t an easy job judging food especially when all is the best. The first-place winners were: Appetizers, Asian Crab Balls; Soup/Salad, Easy Summer Crab Salad; Main Dish, Open- Faced Green Tomato Crab Melt, and Crab Cake, Scampi Crab Cake.
