CRAB CAKE STUFFED SHRIMP OVER A FRIED GREEN TOMATO
Amy Fossett, Severn, Maryland, Grand-prize winner and first place in appetizer division
1 lb. lump crabmeat
12 jumbo shrimp, butterflied
1 clove garlic, finely minced
½ c. green bell pepper, diced
½ c. red bell pepper, diced
½ c. green onion, sliced
½ tsp. freshly ground black pepper
1 tsp. Old Bay Seasoning
¼ tsp. cayenne pepper
½ tsp. sea salt
2 Tbs. unsalted butter, melted
Fried Green Tomato
3 green tomatoes, sliced
½ c. flour
¼ tsp. garlic powder
¼ tsp onion powder
2 eggs
1 c. panko crumbs
1 Tbs. fresh dill, chopped
Vegetable oil for frying
Mixed greens
Sauté garlic, pepper and onion in 1 Tbs. of olive oil over low heat just until transparent. Remove from heat and allow to cool.
