DELICIOUS CHOCOLATE FUDGE CAKE
This makes an 8-inch round cake, 3 inches deep. Ideal for celebration cakes.
8 oz. unsalted butter
8 oz. good quality chocolate
1 Tbs. instant coffee
1 lb. caster sugar or soft brown sugar
5 fl. oz. water
4 large eggs
1.1 fl. oz. vegetable oil
3.4 fl. oz. sour cream or you can use natural yogurt or Crème Fraiche
4.5 oz. self-rising flour
4.5 oz. plain flour
2 oz. cocoa powder
½ tsp. bicarbonate of soda
Preheat your oven to 315°F. Line the deep 8-inch cake tin with baking parchment. Slowly melt the butter, chocolate, coffee, sugar and water in a pan; once melted, allow to cool. Add the eggs, oil and sour cream to the chocolate mix and stir well. Sift all dry ingredients into a large mixing bowl and make a well in the center.
