The following barbecue recipes are from the four areas of the United States that authorities claim to be the most popular. Now for the Guinea barbecue sauce, you will have to wait until the next time a butt-cooking fundraiser comes along.
KANSAS CITY STYLE BBQ SAUCE
1 can (14-oz.) can crushed tomatoes
1 c. ketchup
¾ c. brown sugar
½ c. apple cider vinegar
½ c. molasses
4 tsp. hickory-flavored Liquid Smoke
1 Tbs. salt
2 tsp. ground black pepper
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. onion powder
½ tsp. red pepper flakes
½ tsp. ground mustard
Combine all ingredients in a medium saucepan. Whisk to combine. Bring to a boil and then reduce the heat to a simmer. Simmer for 20 minutes. Allow to cool completely before transferring to an airtight container. Refrigerate overnight for best flavor. Seal tightly and it will keep up to 2 weeks in the refrigerator.
